These 2-ingredient pancakes are healthy and easy to prepare.  The pancakes are a twist on traditional banana pancakes and only use two common household ingredients — bananas and eggs. Bananas are a good source of potassium, vitamins and minerals, and one egg has 7 grams of protein.  

A tasty and healthy option for breakfast during the holiday season or any time of the year, these light, spongy and naturally sweetened pancakes can be cooked ahead of time, frozen and popped into the toaster oven when ready to eat.

Whether eaten while relaxing in bed or on the go, these pancakes will fill you up and power you for the day!

2-ingredient Pancakes
Makes 2 servings

Ingredients:

  • 1 banana (note:  the riper the banana, the sweeter the taste) 
  • 2 eggs

Preparation:

  • Blend both ingredients in a blender.  Mix until smooth.
  • Place on a heated pan and cook until both side are golden. 
  • Flip when the edges are dry and the pancake lifts easily from the pan.
  • Top with your favorite nut butter and berries.
