Football and healthy family fun will once again be in full swing at the Miami Dolphins Family Fit Fest.

Fans of all ages will be able to get a unique look inside the Dolphins training facility. The event will also feature free health screenings, interactive fitness activities, play zones, raffles and giveaways. There will be special appearances by the Miami Dolphins cheerleaders and Air T.D., the Dolphins’ mascot.

As part of the focus on fitness, West Kendall Baptist Hospital executive chef Edgardo Llopiz will be preparing healthy recipes that are perfect for enjoying the big game. You can watch him prepare a delicious salmon recipe below. Watch it now.

Teriyaki Grilled Salmon with Warm Kale and Grilled Fruit Salad

Ingredients

16 ounces salmon

Preparation:

  1. Marinate salmon with the teriyaki sauce. Chop the garlic clove fine and add to the marinated salmon. Set aside.
  1. Cut the watermelon into 1/2 inch wedges, cut the avocado (PLEASE NOTE AVOCADO HAS TO BE FIRM) into 1/2 inch rings, slice the red onion into 1/2 inch slices and set all aside in one metal Drain all liquid from canned red beans and rinse under cold water, set aside as well in a separate bowl. Cut green onion into a 1/4 of an inch slices on a bias, set aside in a small bowl.
  1. In a blender place the pomegranate seeds, the cored red apple, shallot, red wine vinegar, sherry vinegar, ginger root, crushed pepper flakes, salt, and 90/10 olive oil Blend all until smooth. Set aside.
  1. Spray a hot grill with non stick cooking spray and grill salmon, then toss watermelon, red onion, and avocado lightly with about a tablespoon of the vinaigrette and place on the grill as Grill salmon for about 2 minutes on each side, then place in the oven for about 7-10 minutes. Grill fruits and vegetables just to obtain a nice grill mark.
  1. Once vegetables and fruits have obtained a nice grill mark, place into a small mixing bowl and add red beans, lightly rubbed kale super food mix, green onions, and some of the dressing. Toss lightly and arrange on a plate.
  1. Divide salmon into desired portions and arrange on top of salad. Strain the remaining dressing and lightly drizzle over plated dish and serve.
